We first met and interviewed Chef Caines in the early nineties, before his meteoric rise, while he was at the helm of beautiful Gidleigh Park country house hotel in Devon. Even then his culinary talents were evident and he was establishing his reputation amongst other great chefs of the time including: Marco Pierre White, Jean Christophe Novelli, Richard Shepherd, Brian Turner and Gary Rhodes to name but a few!

Michael Caines, for those not familiar with him, is one of the country’s leading culinary lights. The two-Michelin starred chef was voted Chef of the Year at respected The Catey Awards in 2001.
Chef Caines currently has his own country house hotel, Lympstone Manor which is a member of Relais and Châteaux. The hotel is a Grade II listed Georgian mansion overlooking the beautiful Exe estuary in Devon, transformed into a luxurious 21-bedroom hotel with, obviously, a Michelin star restaurant.
A team of talented architectural and interior design specialists were engaged to create a property that both fits seamlessly with its fabulous location on the Exe estuary, and impresses the most discerning guest in its comfort and style. Michael has developed the restaurant’s menu to feature his signature, award-winning modern European cuisine that champions the fabulous produce of Devon and the South West. The hotel and restaurant recently planted its own vineyard, with 18,500 vines with varietals of Champagne: Pinot Noir, Chardonnay and Meunier.
Now, backed by successful Cornish couple and entrepreneur’s Roger and Helen Edwards, he embarks on his newest venture at The Cove Maenporth in Exmouth. The beachfront restaurant will offer a relaxed and informal approach to dining, serving food all day long and whilst championing the best of the Cornish Produce.
The menu will feature a brasserie style à la carte menu offering elevated beachside fare, including Honey roasted Cornish duck with caramelised onion puree and wild garlic and dishes from the Chargrill, including Whole Falmouth Bay Sole with rosemary brown butter shrimp, parsley and capers.
The restaurant will also offer a 6-course tasting menu (£75) for evening service, which will feature Caine’s signature dishes including: Ballotine of quail with raisin vinaigrette and hazelnut mayonnaise, and Fillet of Phillip Warren’s beef chargrilled with horseradish and shallot confit, celeriac puree, mushrooms and red wine sauce.
Located just outside of Falmouth in South Cornwall, the restaurant has long been a favourite for locals and those travelling to Cornwall. Appropriately named ‘The Cove’ due to its location nestled just above the golden sandy beach, the restaurant boasts uninterrupted views across Falmouth Bay and towards Pendennis Castle and the lighthouse on St Anthony Head.
Michael Caines says of his new venture: “I am really excited to be reopening The Cove as my first Cornish venture and working with the dedicated team to welcome new and familiar faces back to the restaurant. It’s a very special and beautiful place here at Maenporth Beach with an incredible outlook over the Cornish Coast and I am excited about the journey ahead of us, showcasing great produce and introducing myself to the local community”.
