Situated in an iconic 1820’s Grade II listed building, the Great Scotland Yard Hotel has recently launched Síbín; a sophisticated whisky bar hidden in plain sight behind a secret door - where whisky aficionados can indulge in premium and specialist whiskies.
Presenting a fresh and inclusive approach to the world of whisky through a carefully curated and ever-changing selection, the menu features a mix of classic and antagonist style whisky cocktails. An elegant yet relaxed space for evening drinks, Sibin functions as a chill-out lounge to enjoy a wide range of specialist whiskies with good company.
Síbín is a term coined in Ireland meaning ‘illicit whisky’; it was used to refer to an illicit club where excisable alcoholic drinks were sold without a licence. The bar of the same name offers high-quality whiskeys with wood and smoke flavour profiles alongside classic and creative cocktails, food pairings and snacks.
Featuring artwork from the likes of Alastair Mackie, Belinda Frikh and Cornelia Parker RA, each piece adorning the walls has been chosen to reflect the glamorous and sultry atmosphere of the Síbín.
Sholto Smith, General Manager at The Great Scotland Yard Hotel comments: “We’re delighted to welcome whisky and cocktail enthusiasts to Síbín. The perfect spot for an after-work drink or even a late-night soirée, Síbín functions as a sophisticated haven for a heart-to-heart, and remains dedicated to premium, heritage whiskies.”
Opening times: 5:30pm – 1am, Thursday - Sunday.
