Cocktail Recipe: Don Papa Rum's celebratory cocktail 'Don's Duo'

Don Papa Rum, has a delicious cocktail, the bittersweet 'Don's Duo' which pairs perfectly with dark chocolate; great shared or enjoyed alone. Warming, gently spiced and just quirky enough, with lockdown keeping us indoors this cocktail is ideal for anyone looking to make this February 14th a bit more special.

Ingredients

• 45 ml Don Papa Rum

• 5 ml Aperol

• 15 ml Raspberry Liqueur

• 15 ml Simple Syrup

• 25 ml Lemon Juice

• 30 ml Egg White

• 3 drops Balsamic Vinegar

• 1 drop Red Food Colouring

Method

Combine ingredients in a cocktail shaker without ice first, shake all ingredients to emulsify the egg white. Add ice, shake hard until thoroughly chilled. Double strain into chilled cocktail coupe.

Zest with a lemon and garnish with 3 drops of balsamic vinegar (pulled with toothpick to create little hearts). Serve in a coupe glass alongside some hazelnut or chilli dark chocolate.
