Incredibly, in its debut year Brooklands by Claude Bosi at The Peninsula London has been awarded two Michelin Stars, the most sought-after accolade dedicated to restaurants showcasing outstanding cooking. Under the guidance and leadership of Chef Director, Claude Bosi, and Chef de Cuisine, Francesco Dibenedetto, the newly launched restaurant’ menus are crafted using the finest British ingredients and traditional French techniques, offering guests a modern yet classic fine dining experience. Chefs Bosi and Dibenedetto, whose long-standing culinary partnership has brought both acclaim, work closely together to create seven, five, and three-course menus that invite diners on a gastronomic journey across the British Isles.
Bosi’s decision to focus on modern British cuisine through the lens of his classic French training invites creativity and innovation, and places British produce at the forefront of dishes served and stories told through the menu. The pioneering spirit of the Concorde that inspired the restaurant underpins each culinary decision to guarantee an exceptional experience for each guest.
Working together with remarkable suppliers across the British Isles, the team at Brooklands by Claude Bosi ensure only the highest quality of ingredients to match the levels of skill used to create the final dishes. Seasonal, signature dishes are a roadmap of the UK. Current dishes including Exmoor caviar with Roscoff onion and duck jelly; Great Fen Farm celeriac nosotto with crab and coconut; Racan guinea fowl with sea beet and Scottish razor clams; and Scottish cèpe, banana and crème fraîche for dessert.
The unwavering attention to detail in technique and flavour are not just complemented by the design, but directly informed and impacted by the space. The distinct design by architects Archer Humphryes is inspired by its namesake Brooklands racetrack – synonymous with ground-breaking speed, flight, and adventure of the Concorde. The dramatic dining room pays full-sensory tribute to the supersonic jet, with an arresting scale replica that spans the entire ceiling, whilst the bar echoes the cutting-edge achievements in automotive and aviation design.
The forward-thinking ethos of Brooklands’ design and cuisine is equally reflected in its exceptional wine list from Head Sommelier, Gioele Musco, reflects Lyon-born Bosi’s heritage with a focus on French vintages, alongside an expansive list of New World wines.
The two Michelin Stars for Brooklands by Claude Bosi marks the most recent award from Michelin for Chef Bosi. His first solo venture, Hibiscus, won its first Michelin Star one year after opening, with a second in 2004. Claude Bosi at Bibendum launched in March 2017 with Dibenedetto, and in October of the same year it was awarded two stars; which it has retained ever since.
Opened in October 2023, Brooklands by Claude Bosi is set on the rooftop of The Peninsula London hotel on Hyde Park Corner. The restaurant offers uninterrupted views of London’s skyline as well as a 360° drinking and dining experience, from its own dedicated entrance on the ground floor of the hotel, to Brooklands Bar, and The Delage Lounge.
Created by The Peninsula London’s Director of Mixology, Florian Thireau, the bar’s cocktails balance precision engineering with inventive creativity alongside a menu that highlights reimagined classics using modern and playful techniques and fresh, daily-made ingredients including shrubs, tinctures and infused spirits.
Hosted by Master of Cigars Manu Harit, The Delage Lounge offers a rarefied and personalised cigar experience with a Tasting Room and Tabac, housing a humidor which displays a collection of over 2,000 premier cigars from around the world.
